Red Curry Beef Stew with Sweet Potato & Kale

I know this soup looks entirely like winter, but I’m not convinced that soup should have a season.

Plus, if we’re honest, spring hasn’t been super committal this year. It’s somewhere between 50 degrees and 87 degrees every day. So, my California wardrobe feels confused. Do I wear a sweater, or is this fog going to burn off– leaving me to sweat like an Easter ham? Do I gamble and wear a dress? Or, is it going to start raining–leaving my laboriously shaved legs to goosebump and become spiky once again. It’s confusing to be in your thirties and feel like you’re not able to dress yourself correctly. At least we have soup, you guys. I get soup. I understand soup. Soup’s not going to make me feel like an idiot for wearing this sweater. I love you, soup. I really do.

In the same vein, there are few things I find more dissatisfying than coming home to a sad, random, slightly bare and slightly rotten fridge. You know the kind. Maybe you go away for a weekend, and then Monday evening rolls around. You open up your fridge to discover a couple of carrots, an egg carton with one whole egg and six egg shells (whoops), half a cabbage, and a Tupperware full of  already-dressed, already-soggy salad. Herb & Garlic Crusted Eye Of Round Roast With Orange Chimichurri Sauce

Sometimes you gotta take the day slow. Breathe. Allow yourself the be lazy. Watch some terrible television. Zone out. Meditate. Allow your dog to lay her whole body on top of your body and snooze. Maybe this is just what I’m telling myself. Maybe It’s the late afternoon and I’m sitting here typing while wearing a negligee over a pair of hopelessly baggy sweatpants. Maybe my hair is not washed. Sometimes Wednesday just wins and you have to surrender to its midweek slump.  That’s what’s happening over here. But, while I’m busy nailing the position of hot-mess-blogess, and girl-covered-in-dog-hair, I can also be busy nailing this Garlic & Herb Crusted Eye Of Round. It takes only a little bit of prep, and spends most of it’s cooking time just sitting in a cooling oven. I might not be able to handle showering before 4pm today, but I can handle lazily cooking a piece of beef. We all have our priorities. Crock-Pot Carne Asada Lettuce Wraps

Don’t you love it when dinner pretty much makes itself? All hail the crock-pot! It’s been a very useful tool for me lately.
As I mentioned before, I’ve been trying out eating Paleo for 30 days. I think I’m somewhere in week three. It’s been way less complain-worthy than I thought it was going to be. Sure, I might want to put goat-cheese on almost everything, but I resist the urge. Also, full disclosure…there might have been some light cheating. One night I ate out at this restaurant and caved at the truffle-infused mashed potatoes. Seriously, no regrets. They were everything I hoped for and more.
