One-Skillet Crispy Lemon Pepper Chicken Thighs and Whole Roasted Brussels Sprouts

Guys, I’m kinda lazy.

Not really. I do stuff. All the time. I’m busy. I’m living my life and trying to keep up with laundry and take the dog to the park, and shove pills down my asthmatic cat’s gullet (honestly, my husband has been doing this–he is a saint, because she’s terrifying). I’m trying to run multiple businesses, continue to heal from multiple illnesses, and all while trying to still be nice to my husband when it’s late and I’m starving and no one has cooked dinner, and we basically just want to eat ice cream and pass out on the couch to Bobs Burgers.  Basically, I am you.  […]

A Decadent Gluten-Free Valentines Day Feast For Two!

I’ve been dishing up recipes like crazy in order to help you build the most perfectly decadent Valentines Day dinner at home! I wanted to put this post together so you’d  have the whole menu in one place. Oh, and it’s a good one. If I could live somewhere inside those Creamy Goat Cheese + Lobster Mashed Potatoes, I would. Or, maybe I’d build a home out of that filet mignon? Um, don’t make me choose. Let’s just eat it all. Okay, good.  […]

Lemon Roasted Brussels Sprouts

I’m continuing on with my crusade to make your Valentines Day one for the culinary books! I’m sure you’ve seen my Perfect Pan Seared Filet Mignon and my deliciously decadent Creamy Goat Cheese & Lobster Mashed Potatoes– but, what about veggies? We’ve all been to a steakhouse and then received a beautiful plate of steak, a baked potato and the saddest pile of wilted green beans or sweaty, droopy-looking carrots. It’s depressing. Let’s stop the madness and make a simple and delicious vegetable side dish that doesn’t make you feel like crying.  There’s no crying in vegetables! That’s a famous movie quote, right? Something like that. Just imagine I’m Tom Hanks. […]

Crispy Roasted Potatoes & Brussels Sprouts With Cilantro Sauce, Goat Cheese & Olives

I know that the holidays are in full effect, and that I should probably be posting how to make sugar cookies shaped like reindeer, covered in candy canes and peppermint bark and dipped into eggnog. That would be festive. Also, gross. Note to self: don’t dip overly-candied cookies into eggnog. Or, do. I feel confused. Is there a Christmas professional around who can tell me if this is a good or a bad idea? Also, how many gingerbread cookies crumbled up into a bowl make a good breakfast cereal? I have a lot of questions. But, I digress. Treats. I’ll probably be shoving treats in your face soon, so not to worry. However, this is the kind of food I’ve been crushing on currently. Hard. Like, I’m a twelve year old girl in 1995, and this pan of roasted veggies is on the cover of Tiger Beat right next to JTT. Big-swoony-write its name on my binder kind of crushin’. Practice kissing on your hand before bed kind of crushin’. It’s serious.  […]
