Happy Monday, folks! My husband, Peter, is in the house today writing some words about salad. I really love this human, and I hope you do too. But, not too much. He’s mine. Alright, I’ll chill out. Here’s some words on vegetables… 

I come from a family of salad skeptics. Sure, we’d have lettuce or vegetables as a side with dinner. Maybe it’d even include salad dressing with questionable expiration dates from my parent’s fridge. But the concept of a salad as a main course was a foreign one. The closest we got was a kale-mashed potato-sausage mash-up that I hated as a kid, however, older me is kicking younger me for missing out on that treasure. That diddy was of course made and served by my mom. My dad falls into the camp of “suspicious of anything green”. Honest Whole 30 Recap, Week Four + Dairy-Free Chocolate Cherry Hazelnut Ice Cream

If you’ve been following along this past month, you’ll know I’ve been chomping, loving and sometimes struggling my way through a Whole 30. I’ve been coming here and writing you full disclosure,  overly-honest weekly recaps of  what this experience has been like. If you’re just tuning in now, lemme catch you up: Week One. Week Two. So you know what this post is, right?! It means I DID IT! Holy Bears. I made it. This is Whole 30 graduation. That moment where I walk across the stage in my cap and gown and gloriously move that tassel from right to left. I go to accept my Whole 30 diploma and moon the audience.( I think I saw that in a 90’s movie once–maybe we’ll scrap that bit). This is the moment where we cue the Chariots of Fire theme song as I cross the finish line. I’m wearing dolphin shorts (because, why not). I valiantly break tape with my chest. Is that tape made out of cheese? Maybe. In that case, I break the tape with my mouth.  I chug some water and then eat all the ice cream.  Of course, none of this actually happened. Brussels Sprout Salad With Walnuts, Cherries & Bacon

Summertime means 9pm cocktails on the deck because the sun has yet to go down. It means grilling. It means buying 4lbs of peaches at the farmer’s market and existing on them for days at a time. It means questionable fashion decisions because, heck, it’s hot. It means letting the dog get wet while you water your plants because she must be ever hotter in that fur suit of hers. It means let’s not turn on our oven tonight. It means berry picking and cucumber pickling. It means walking to the park in the evening and feeling the warm breeze hit your skin. It means waking up with approximately six mosquito bites on your backside even though you were totally wearing pants last night on that walk. What? That’s uncomfortable. Oh, well. It means you’re now having an intense relationship with Calamine lotion. Excellent.

Summer totally means SALAD. You know what I’m talking about. It means the kind of salads that can pass as a whole meal. The kind of salad that your husband will ogle because it has bacon and fruit and is topped with a runny soft-boiled egg. This salad is serious and meaty and summery. It’s a total win.
