Quick & Easy Homemade Guacamole

Who’s in the mood for a little storytelling? I’m going to give you the origin story of how I learned to make the worlds easiest guacamole. But, mostly this is an in memoriam to the kitchens of college past.

When I went off to college I was armed with an arsenal of low cut tops, chunky platform flip-flops and a handful of recipes that I had learned from my mother. The first year of school was spent in a crowded dorm room with two other girls. The microwave was attached the the refrigerator, creating this for-rent contraption called a “Microfridge”. Like any good Hawaiian girl, I brought along a rice pot. My Filipino roommate moved in with the largest bag of rice I’d ever seen, and a Costco pack of Vienna Sausage stored on the upper tier of our closet, above the coats. These things made up our “kitchen”. Cooking that year didn’t resemble cooking. I ate a lot of frozen burritos, and whatever suspicious “maybe it’s chicken, or is this fish?” they served us in the cafeteria. Our Microfridge only caught on fire three times that year, burning whatever questionable food we were trying to nuke at the time. I suppose this was a regular occurrence in other dorm rooms as well. Sometimes when walking the halls, it would smell like a Chicken Chow Mein electrical fire–wafting the scents of takeout mixed with dangerous university issued appliances from under the doors. Slow-Cooker Cuban Brisket Taco Bowls

I don’t usually write blog posts on Sunday evenings. I’m usually in the throes of doing a week’s worth of laundry, meal-prepping, and simultaneously trying to nap with my mouth open and watch old episodes of Grey’s Anatomy. Yes, it’s hard to do all those things at once, but I’m nothing if not ambitious. Or, if we’re honest, sometimes half the laundry doesn’t get folded, only vegetables get chopped up for my “meal prep”, and I’m like WAY deep into a Grey’s Anatomy binge. Like, WAY deep. Like, season 10 deep. Like, Bailey might have OCD and Meredith and Christina are fighting and April is going to marry what appears to be a thirty five year old virgin DEEP. Ooof. None of this is really important though–just the simple point that on Sundays you won’t usually find me here furiously typing up every weird thought that happens to come to my brain.

But, tonight, I found myself thinking that all of you need the recipe for these super easy taco bowls. ‘Tis the season. I want to be the Santa Claus of your Cinco De Mayo celebration. Santa de Mayo. Except, I’ll wear a sombrero and my belly will jiggle like a bowl full of guacamole. My sleigh will be pulled by donkeys. I demand that you leave out taquitos and a glass full of tequila. Quick Pickled Red Onions & Radishes

Cinco de Mayo is swiftly approaching.

I’m not Mexican. But, on Cinco de Mayo I get to pretend. I get to high five all the tacos with my face, raise a margarita or two to my mouth hole, and worship all things guacamole. This is special for me. But, almost any excuse to put guacamole or carne asada in my face is special for me. Do we need an excuse? I’m not sure we do. I suppose I could live every day as if it were the fifth of May. Minus the kitschy sombrero wearing and the early afternoon margarita. Yes, every day could be the fifth of May. Crock-Pot Kalua Chicken Tacos With Chili Lime Mango Salsa

Last weekend we moved.

There is a slow and heavy chaos that comes with moving. A tired sort of chaos. The kind of chaos where your arms and your back start to ache so you just shove boxes labeled “Gina’s Shoes” into the guest bathroom next to the shower. Your box labeled “Super Important Office Stuff” is buried somewhere in a sea of boxes in the garage, most likely under my childhood doll furniture. I still can’t find my favorite bra. It’s getting weird. We’ll figure it out later. The kitchen is unpacked. The living room seems livable. We’re moving through the moving process. Let’s just not talk about the office. Or the bedroom. Or the guest room.
