I have two speeds when I’m overwhelmed. The first speed is the high speed of my Kitchen Aid mixer making something superfluous, or the low and slow bubbling of something rich and comforting (read: this eggplant parm). Orange Almond Skillet Cake {Gluten-Free}

In this past year and some months, it’s become increasingly clear the cure for writer’s block is baking a cake…or cookies. Heck, maybe even some scones. Oh, and one time this Shepherds Pie.
Okay, it cures more than just writer’s block. It helps that stuck feeling. That “I have so many things I should be doing—but I can’t seem to process it all, so, what now?” feeling. You might be wondering, how does one identify themselves as such? Sure you’ve watched those shows where people collect newspapers and trinkets and hundreds of cats, but banana hoarding has yet to be seen as mainstream. I get it. So, let’s just say there comes a point in time when you open up your freezer in order to stash away this week’s leftover banana bounty, only to realize there is legitimately no more room due to your already overwhelming collection of frozen bananas. Beet and Parsnip Chocolate Cake | Gluten Free

It’s good to have creative friends.

My friend Becca over at The Dabblist posted a recipe for Chocolate Almond Molten Beet Cakes.  I died. They looked so gooey and wonderful.  The color of red velvet.  Oh, and they are made with beets.  No big deal.  When I saw that post I got really fired up.  I wanted to bake with my beets.  I wanted to beet it.
