I am in the weeds, Friends. I will admit this to you wholeheartedly. I am truly behind. My kitchen has taken a backseat to life lately. Surely you understand this. I can’t be the only one who gets overwhelmed by life and ends up drinking one kind of smoothie, slapping ham on toast and eating handfuls of spinach straight out of the bag. This is a thing right? Besides baking different variations of this bread to cart off to my family, I have not exactly flexed the muscles in my food brain. It’s losing muscle mass. It’s sitting there in a smoothie rut. Flabby. We can’t have this, right? Let’s tell my food brain to wake up and go for a walk.

On Tuesday morning this is exactly what I did. I sprung out of bed and decided it was time to create something that was not toast. Also, my husband had been not so subtly hinting  for a couple of weeks that he would be utterly thrilled if I would replenish the granola stash. While we were grocery shopping he decided he might get some sort of sugary cereal, I told him I didn’t like his moves, he told me that if I made granola he wouldn’t even be considering it. Touche. Point taken. There was also a week where the empty granola canister kept appearing on the counter magically as if to say “GRANOLA! NOW!” I am not sure how it got there. I did not put it there. I don’t think the cat or the dog have the dexterity to grab the canister from out of the pantry and place it on the counter. This only leaves one human. I am not going to point fingers, but I will give you a hint…I am married to him.

So here we go. I put quinoa in your granola. Sure, I have made you granola before, but this one has a little something extra. I got this magical idea from my friend Meg’s wonderful blog. If you have never had quinoa in your granola I can tell you right now it will completely blow your mind! It’s wonderfully crunchy and will not get soggy if you let it sit. Say you take your bowl of granola and milk into the office and end up getting distracted by half an hour of cute internet cat videos. Your granola will survive this. I promise. Not that I would know anything about getting distracted by a half an hour worth of cute internet cat videos. That would be weird.

Besides the awesome crunchy quinoa, I have a list of other all star ingredients that are coming to bat in this breakfast. We have raw almonds for even more protein. Raisins add a layer of sweetness along with a little bit of maple syrup. Of course, I couldn’t resist throwing some coconut into the mix. I am only human. There are whole roasted flax seeds and a couple of tablespoons of chia seeds. You can’t get mad at either of those power houses. And in my opinion, the real show-stopper in this recipe is the addition of freeze-dried bananas! Do you remember Lucky Charms? Of course you do. Remember those tiny little marshmallows? That is what these bananas feel like. It’s the healthy version of a tiny little marshmallow treat. Get on board. It’s good.

When my husband came home, he opened the pantry for a snack. You should have seen the look on his face when he saw the canister full of this tasty granola. He lit up like a glow worm. I think I even got a hug and a kiss. He really likes granola. I really like him.

Banana Nut Granola With Quinoa

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups gluten-free oats (I got mine from trader joes)
  • 1 cup raw almonds
  • 1/4 cup roasted whole flax seeds
  • 1 cup large unsweetened coconut shreds
  • 2 tbs chia seeds
  • 1 tsp cinnamon
  • 1 tbsp vanilla extract
  • 1/4 cup coconut oil
  • 1/2 cup maple syrup
  • 2 cups freeze dried bananas
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line a large baking sheet with parchment paper and set aside.
  3. In a large mixing bowl add your quinoa, oats, nuts, seeds, and spices.
  4. Heat up your coconut oil until it is liquid and add it into the bowl along with your maple syrup, and vanilla extract.
  5. Stir the mixture until everything is completely combined and coated with the coconut oil and maple syrup mixture.
  6. Spread the mixture out evenly onto your parchment lined baking sheet.
  7. Bake for 20-30 minutes checking and stirring the mixture every 10 minutes, You need to make sure to check it and stir it up so that it does not start to burn.
  8. You granola is done when the nuts and oats are all toasted a nice golden brown.
  9. Add in your raisins and your freeze dried banana. Stir it into the already baked granola so it is distributed evenly throughout.
  10. Let your granola cool for 15 minutes or so before putting into an air tight container. You can store it this way for several weeks.
  11. Enjoy!

It’s Steak and Lobster Day!

That’s right. Some people might refer to it as “Valentines Day,” but in this house we refer to it solely as Steak and Lobster Day. After a few years of going out to over-priced fixed menu dinners and suffering through people coming over to our tables and loudly serenading us with accordions or trying to sell us roses, we decided that we needed to go another route. One can only be serenaded by an accordion while eating overpriced lamb so many times. We started to notice that really good quality steak and lobsters were on sale at our local market during the Valentines madness. Jackpot. Thus was born Steak and Lobster day.

In this tradition we get to wear sweatpants or fancy pants (it doesn’t matter we are at home…we don’t even have to wear pants at all… although, I do not recommend cooking without pants, no matter how sexy you think it’s going to be. Stuff splatters. We all learn our lessons). We eat an indulgent meal, usually dipping the lobster in some sort of butter bath.  We drink wine. We tell each other nice things. It’s a good tradition and one that I look forward to every year.

Although it is usually just referred to as Steak and Lobster day, that doesn’t have to be the only special treat on the menu. What is that old saying? The way to a mans heart is through his stomach? That is true. I am sure my husband would still love me if I couldn’t make a mean meatball or didn’t bake him a confetti cake every year on his birthday… but, it certainly sweetens the deal.  It turns out that the most obvious way to my man’s heart is through his sweet tooth. He is Dutch. He grew up putting chocolate sprinkles on his toast. It all makes sense.

Waffles are always a good move for a man with a sweet set of teeth. I also added some cinnamon apples to sweeten things up a little more. I’ve said it once and I’ll say it again, but fruit totally turns into something magic when you heat it up. Apples basically turn into pie filling. Hello. Delicious. The waffles manage to taste totally indulgent while remaining both gluten and dairy free! The apples cook down in coconut oil and release their natural sugars. Cinnamon joins the party and spices things up nicely! It’s the perfect sweet treat for your Valentine… er… Lobster… er… I don’t know what to call my husband on Steak and Lobster day. Will you be my Lobster-tine? Does that work? It’s a work in progress. Give me your thoughts.

Real talk… I made these waffles that you see here while my husband was at work. I ate all of them.  I know that I am acting like I made them for him, and I totally have… but this batch was for me. It’s okay to be your own Lobster-tine sometimes too. You are special. You deserve it.  If you have no one to share your waffles with, be your own Waffle-tine. It is totally a thing. (okay…enough sticking “tine” on to the ends of words. I got the memo).

Buckwheat Waffles with Cinnamon Apples

Ingredients

    For The Waffles:
  • I cup buckwheat flour (I used Bob's Red Mill)
  • 1/2 cup almond meal
  • 1/4 cup white rice flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 2 tbs coconut sugar (can be replaced with regular sugar)
  • 1 cup almond milk
  • 1/2 cup lite coconut milk
  • 2 large eggs
  • 3 tbs coconut oil
  • Maple syrup, to top
  • For The Cinnamon Apples:
  • 3 pink lady apples, peeled and chopped
  • 1 tbs coconut oil
  • 1/2 tsp cinnamon

Instructions

  1. Plug in your waffle iron and let it start heating up.
  2. Peel you apples and give them a course chopping.
  3. Heat your 1 tbs of coconut oil in a medium sized pan and then add in your apples. Add in your cinnamon and start to cook on low to medium heat. Keep stirring them occasionally so that they brown and caramelize on all sides.They are done when they become soft and have lightly browned.
  4. While your apples are heating up, start to prepare your batter. In a large mixing bowl, add in your dry ingredients and stir together until they are all thoroughly combined.
  5. In another bowl, whisk your eggs.
  6. Add in your coconut oil, almond milk and coconut milk to the egg mixture and whisk together until everything is mixed well.
  7. Add you wet ingredients to your dry ingredients and whisk. Whisk until a smooth batter forms. If your batter seems a little too thick, don't panic. Add in a little more almond milk. (I would add it in small increments, a tablespoon at a time.)
  8. Once your batter is completely whisked together, you can start making your waffles. Spray your waffle iron with non-stick spray. (I use olive oil spray from Trader Joes) and then ladle a 1/4 cup or a little more of your batter into your waffle iron.
  9. Cook your waffle until it is crispy on the outside.
  10. After you are done cooking your waffles, top them with some of the Cinnamon Apples and some maple syrup and enjoy!

Let me start off this post by openly acknowledging I’m a hot mess.

My desk is usually a sea of papers. Most of these papers are recipes either printed out or crudely scrawled with a sharpie onto the backs of envelopes or pieces of junk mail (you never know when inspiration will strike, right?). There are composition books filled with ideas and more than likely at least four drawings of polar bears in pant suits. I am constantly cleaning up the mess and thinning down the horde, but it always seems to come right on back. I will call this my process. It’s a messy process, but it gets you Cheesy Cauliflower Bakes and Peppermint Patty Brownies. I vow to myself at least once a week to get it together and type my recipes directly into a very organized folder on my desktop. This doesn’t happen. It’s not as much fun. It’s so much harder to doodle cupcakes and pandas in the margins of the page of a Word document. It’s all part of my flow.

This morning, I woke up hell-bent on sharing this cookie recipe with you. I’ve been sitting on it for a few weeks and I figured it was just time. Fridays are the time to start dreaming about chewy-gooey cookies. It’s a fact.

I put on my slippers, grabbed a green juice, and headed over to my desk. Uh oh. It was clean. The only thing on my desk was my camera, some pens and a crudely drawn rendering of a puppy dog wearing an afro wig. Where did I put my recipes again?

I searched my files. Nothing. I searched cabinets. Nothing. I searched binders. Nothing. I found my recipe for cheesy biscuits, but where was my cookie recipe?! I got wild eyes and started to tear apart the office. Emma, our golden retriever, looked at me and sighed loudly as if to say, “Mom. Get it together.” She is hardly amused by my antics.

Now, for the final act, I decided to go through the trashcans. That is right. I really wanted to bring you these cookies. I reached my hands into the trash and started to root on through. Early morning dumpster diving at home. Lovely. I found a lot of things in there that I won’t mention because, EW. I did not find the recipe.

Finally I went into my kitchen and sat on the floor in frustration. I lay down next to my dog, sulking. There was drama. Life was pretty much over. As I looked up at the microwave to my right, I saw a stack of papers making their home neatly right on top.

I found it.

The moral of the story is, I am a hot mess. My dog thinks I am dramatic, and I love you enough to root through trash to bring you a recipe for cookies.

These cookies are loaded with every delicious thing I could find in my pantry. The base is a chewy oatmeal cookie sweetened by brown sugar and maple syrup then made gooey and rich with butter. I took this oatmeal cookie and pumped it full of chocolate, cranberries, coconut and walnuts. It’s a full house of deliciousness. Totally loaded. My husband took the remainder of the uneaten cookies to work with him and they disappeared quickly.

Ingredients

  • 1 1/4 cup all-purpose gluten-free flour (I used Bob's Red Mill)
  • 1 cup almond meal
  • 1 tsp xanthan gum
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup packed brown sugar
  • 1/3 cup coconut sugar (you can use granulated sugar if you don't have coconut sugar on hand)
  • 2 large eggs
  • 1 tbs vanilla extract
  • 1/2 cup maple syrup
  • 1 3/4 cups old-fashioned uncooked oatmeal
  • 3/4 cup dried cranberries
  • 1/2 cup unsweetened coconut shreds
  • 1 cup walnut pieces
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
  2. In a medium mixing bowl, whisk together your flour, xanthan gum, almond meal, salt, and cinnamon. Set it aside.
  3. In your electric mixer bowl combine your butter, brown sugar and coconut sugar. Mix on medium speed until it is thoroughly combined. Once the mixture appears slightly fluffy (about 3 to five minutes in), stop the mixer and scrape down the bowl.
  4. Add in your eggs one at a time, running your mixer for a minute in between the addition of each new egg. Add in your vanilla extract, and maple syrup and beat until both are completely mixed in.
  5. Once your egg and butter mixture is completely combined, add in your flour mixture and beat until it all comes together.
  6. Once it is completely combined fold in your oats, cranberries, coconut flakes, chocolate chips and walnut pieces by hand. Stir until it is all thoroughly mixed throughout the batter.
  7. Spoon the batter by the heaping tablespoonful onto your parchment paper lined baking sheets.
  8. Bake for 10 to 12 minutes or until your cookies are a beautiful golden brown.
  9. Remove from oven and allow to cool.
