Turmeric Cauliflower Tabbouleh Salad With Veggies, Herbs & Peaches {Gluten-Free, Grain-Free, Paleo, Vegan}

What do you say we sneak in one more late summer recipe to close out the season? You know, just a bookend before the PUMPKINPOCALYPSE explodes in full swing and our internet eyeballs feel the harsh sting of cinnamon and cloves on everything. I’m totally not mad at fall, you guys. In fact, I welcome the cooler weather and the shift in energy that comes with autumn. I like to watch the leaves turn. I get excited when the first rain hits and the dusty golden hills get their first drink of water. I like the feeling of baking my fist pie. I enjoy taking a fork to that pie while watching Netflix and asking my husband to light the first fire of the season. All of these things feel cozy. Give me a sweater and some thick socks and a thermos full of hot toddy. I’m in.  […]

Roasted Summer Fruit Cookie Shortcake With Coconut Whipped Cream

Summer felt different when I was a kid.

It was thick and lazy with the scent of chlorine clinging to everything. Perpetual tan lines carving their way through my shoulder blades. Rich purple plums being plucked off of my grandparents’ tree — the warm juice trickling down my chin. It was matinee movies with buttered popcorn. It was watching my dad try to put out fires we’d accidentally set with shady roadside Fourth Of July Fireworks. I can still see him running around the back yard, chasing away sparks with the lid of the BBQ. It was the beach, and family vacation. Sleepovers were long, and filled with whispers about boys. We made prank calls and ate pancakes. It was dusky evenings in the tree house–swinging in a hammock and deciding what character I’d be in The Babysitter’s Club (Claudia–always Claudia). It was the sticky packages of store bought shortcake, fresh strawberries and a canister of whipped cream. A little bit gross, but also kinda great. […]

Taco Bowls With Grilled Corn, Zucchini & Peach Salsa {Two Ways}

Let’s take a minute to talk-o ’bout the taco bowl. Puns, heh.

The concept of a taco bowl is taking everything you would shove inside a tortilla and just throwing it into a big serving trough (or bowl) and then eating from this trough with a trowel (or fork). If we’re honest, I make this stuff once a week. It tastes good and it comes together quickly. It’s also another excuse to put guacamole on something, so right there, I’m into it. The lack of tortilla encourages room for more veggies and greens. This is the perfect way to trick one’s husband into eating a large salad. Maybe I should serve all  salad with a side of hot sauce. It works. […]

Donut Peach Green Juice

Don’t get too excited. I didn’t juice a donut (not that I’ve never considered it).
Instead, we’re juicing the glorious donut peach. That’s right. No, it’s not filled with jelly or fried to perfection. It is simply a sweet little variety of white peach that looks like it has been smushed into the shape of a donut. They are also called Saturn peaches. Perhaps it’s because they are simply outta this world… amirite? See what I did there? Of course you did. Oh, what’s that? We’re ignoring that joke and just moving on because you’re doing me the solid courtesy of letting it slide? Gosh, I appreciate you. For reals.
Perhaps it’s one of those days where we should get right to the recipe. The next joke I have in my brain involves a rocket ship. Don’t ask. Really. It’s Thursday. Officially the day in the week where my brain turns to cheese and puns fall out of my mouth with no regard for their quality. I’ve officially pulled the third rotting banana this week out of my handbag, and I’m eating cold meatballs for breakfast. Jealous? Don’t even get me started on my outfit. It’s like MC Hammer meets laundry day meets covered in dog hair. Can’t touch this. *Insert uncomfortable pelvic thrust dance moves here* […]
