Thanksgiving Meatballs with Easy Pan Gravy

Here we are again. It’s that time of year where I say predictable things like “What? How is the year almost over?” or “The holidays are chasing me down and I feel like I can’t breathe–can you pass me that paper bag to breathe into? Thank you.” Oh, was that second thing not as predictable? I dunno, it feels about right. The holidays are filled with a lot of joy, but they can also fuel a lot of stress and panic. For me, I’m pretty much always traveling on a holiday to get to family. So, a lot of the stress is logistical. I also get stressed out because my birthday is very near Thanksgiving and I’m getting old and I don’t want to feel my feelings–but that’s an entirely different post that isn’t centered around meatballs or topped with anything like gravy. One-Skillet Pork Chops With Apples, Fennel and Kale {Gluten-Free & Paleo}

If I told you that you could make this entire meal and only dirty a single skillet, would you try to make-out with my face? Because, that’s totally going on. It’s another one-skillet wonder. So much better than a one hit wonder, right? Or… a one trick pony. Although, I sincerely wonder what the original One Trick Pony’s trick was. I imagine a pony wearing a tutu and singing songs from Les Mis while juggling. But, it probably wasn’t that cool since technically my imagination already puts that pony at THREE tricks. Don’t be a three trick pony isn’t a saying. […]

Marinated Thai Pork Chops With Spicy Cilantro Sauce & Herbs

Ever watched a film that gave you an insatiable need to marinate pork?  No? Well, then perchance you’ve never seen Chef.

I might have watched this movie three times in one weekend, but I can’t say for sure. What I can say for sure, is that this film was GRADE A food porn. It felt like a breath of fresh air–a bacon-scented wind blowing against my food-loving-face.  A visual symphony, singing me a melody of “marinate something—probably a pig”. So, that I did. We got piggy with it. […]

One Pot Spanish Rice

Is anyone  experiencing an Election Day hangover? Not the booze induced kind (unless you are…no judgement, I get it.) but rather the kind that comes from nail-biting anxiety and an over-indulgence in things like chocolate, or perhaps a particularly hefty Chipotle burrito bowl.  Yeah.  Me too.  I woke up this morning wanting to crawl back into bed.  Isn’t it Friday yet?  It seems like Friday.  Nope.  Still Wednesday. Hump day. That joke never gets old.  Truth.

So, let’s make something easy.  Something you can make in one pot.  Who wants to do dishes on a Wednesday?  Not me.  Let’s minimize and simplify and make something comforting, flavorful and delicious.  Today I bring you a One-Pot Spanish Rice. […]
