Daikon And Carrot Noodle Salad With Sesame Ginger Dressing

I haven’t sat down to write in this space for three months.

Well, that’s not entirely true. I’ve come here. I’ve flipped the lid of my laptop. I’ve stared blankly into the screen. I’ve opened up a fresh document and wrote over a thousand emotional words about the hollow exhaustion I feel on this lengthy health journey–plus, just all the feelings.

Feelings about shootings,  infuriatingly flippant rape convictions and all of the tirelessly troubling news that seemed to hit over and over again during the summer. The 2016 political climate and how IDONTUNDERSTANDWHATISHAPPENING.  I wrote about why I wasn’t writing. I just wrote all the words that came up. The word vomit. Out of my finger tips. Finger vomit? Feelings vomit? Finger feelings? I wrote those.

How do I say all the things I need to say? How vulnerable is too vulnerable? Do I even have anything important to say? I’ve been silent for too long. Do I even remember how to blog?  This is a food blog, should I even talk about rape here? So many important things are going on, not to mention the crippling exhaustion I’ve faced these last months struggling with my own health. Should I let them know that sometimes, even though I’m strong, I cry and sincerely fear that I will never be healthy again? Should I really just write about salad? Look, here’s a nice salad. Zucchini Pasta With Lemon Pesto, Chard & Oven-Roasted Tomatoes {Gluten-Free}

It’s 90 degrees in my backyard and my tomato plants are still busy ripening tomatoes. Sure feels like summer to me.

I know that the days are starting to get shorter, and the mornings are coated with a sleepy-fog that rolls inland from the coast. But by the afternoon the fog burns off and it’s time for shorts and a reapplication of deodorant.

Summer is clinging on. It’s produce is clinging on. Oh, and I’m clinging on. So, until my tomato plants start to shrivel under frosty mornings, and I’ve located the last pretty-looking peach at the farmer’s market, I’m just not done. Pumpkin is coming. I get it. But, let’s enjoy this late summer bounty while we still can. Let’s make pesto and roasted tomatoes and slather all of it over some zucchini noodles. This feels about right. Honest Whole 30 Recap, Week Two + Raw Zucchini Ribbon Salad With Tomatoes, Basil & Olives

Alright, folks! It’s already been a week since the Honest Whole 30 Recap, Week One!

If you didn’t catch that post, you can read it here. I get into what the Whole 30 is, explore the creepy term “sex with your pants on” in relationship to cauliflower pizza, explain why I am not crazy-militant with myself,  and how I accidentally ended up drinking all the bourbon. Oh, and no… just in case you’re wondering bourbon is not on the approved Whole 30 list of foods. Whoops. But hey, we’re keeping it real.

So, today I get to share with you the nitty-gritty of the second week along with a super simple recipe for this zucchini ribbon salad. See that picture? I put all of that in my face. All of it. I photographed it with two plates to make it look like I was a dainty lady– and that I wasn’t the only person hoovering a salad built for four into my singular gaping pie-hole.

Sometimes you just need to eat all the veggies, because you can’t eat all the chocolate. Also, when in doubt… spiralize all the veggies. It just makes things fun. I don’t have the scientific proof, but I’m pretty sure there is some sort of study somewhere by some guy who likes to do studies which states that eating zucchini in its spiralized form is 110 % more fun then eating “regular” zucchini.
