Kale Salad With Golden Raisins, Walnuts & Pecorino

As most of you know, my husband went out of town on business. How do you know this? Well… I wrote a pretty awkward post about it. Remember my last post where I drew you a Capybara Ballarina and there were talks of me eating entire boxes of gluten-free mac and cheese? Yeah. #SingleLadyProblems. Well, things didn’t get any more normal in the evenings to follow. I baked and consumed an entire dozen chocolate chip cookies. I spent Saturday evening making jelly and sobbing while watching the movie Stepmom. Don’t worry… I totally saw a bunch of friends and went out into the world, but when it got late and my hands needed to keep busy, I would get in the kitchen or get out a paintbrush or turn on Netflix and watch four solid hours of birthing documentaries. Whoa. Real story. I saw everything. I then spent an hour and a half researching midwives and doulas and water births. This is BIG news. As someone who is enthusiastic about growing things, it can be slightly disheartening when I kill my succulents. Correct. I have killed various cacti in my gardening career. Don’t even get me started with my various vegetable growing flops. It’s a sad scene.

Broccoli & Apple Quick Slaw

My life has felt pretty full lately.
On one hand, it is wonderful. I’ve been working hard doing the things I love to do. I pretty much get to take pictures for a living. I get to put words to paper. I get to meet lots of new people and forge new connections. I get to use my hands to create things. I also get the chance to come here and chat with you and share my unbridled enthusiasm about smoothies and shoving things in a crock pot. Chatting with you is one of my favorite things. I feel pretty darn lucky.
On the other hand…
The dishes occasionally get piled a little higher than I would like. The number of emails in my inbox seem to be staring at me funny. The mountain of laundry is intimidating and something I would rather nap in than fully tackle. I have a brand new David Sedaris book that seems to be stuck in rabbit ears around page 12. The amount of scrap paper and weird Amazon packaging that seems to have accumulated in my office could be considered light hoarding. Seriously, as I type this, I am sitting in close proximity to: Magazines, duct tape, three cardboard boxes, poster board, a water color painting of  Justin Bieber as a polar bear, scotch tape, unsorted mail, and about three different camera bags that look like they have all exploded. This is real life.

Giant Sunbutter & Chocolate Chunk Cookies {Gluten-Free & Paleo}

After a week of intense recipe failures one needs to bake cookies.

I think this is a rule. It feels like it should be a rule. Let’s call it a rule.

In between my lemon bar attempt and operation “OMG, is that supposed to be gnocchi!? “, I managed to get something right. I put some sunflower seeds into a food processor and  made some nut butter. I combined it with almond butter. The two did a happy dance. I added in large chunks of dark chocolate, and decided that these cookies should be GIANTS. Instead of making a recipe that would yield a sensible dozen, I decided to instead make you six cookies. Big cookies. Forget about your kitchen failures cookies.
