Slow-Cooker Cuban Brisket Taco Bowls

I don’t usually write blog posts on Sunday evenings. I’m usually in the throes of doing a week’s worth of laundry, meal-prepping, and simultaneously trying to nap with my mouth open and watch old episodes of Grey’s Anatomy. Yes, it’s hard to do all those things at once, but I’m nothing if not ambitious. Or, if we’re honest, sometimes half the laundry doesn’t get folded, only vegetables get chopped up for my “meal prep”, and I’m like WAY deep into a Grey’s Anatomy binge. Like, WAY deep. Like, season 10 deep. Like, Bailey might have OCD and Meredith and Christina are fighting and April is going to marry what appears to be a thirty five year old virgin DEEP. Ooof. None of this is really important though–just the simple point that on Sundays you won’t usually find me here furiously typing up every weird thought that happens to come to my brain.

But, tonight, I found myself thinking that all of you need the recipe for these super easy taco bowls. ‘Tis the season. I want to be the Santa Claus of your Cinco De Mayo celebration. Santa de Mayo. Loaded Tuna Salad Mason Jars To-Go + The 21 Day Sugar Detox Recap {Weeks 2 + 3}

I always find it slightly troubling that life around you does not slow down when you do. For instance, it’s been several weeks since I actually completed my 21DSD (21 Day Sugar Detox), but I haven’t been able to write about it until now. Time did not freeze. The internet did not stop creating meme after meme. Life goes on, even when you’re laying on the couch with fevers and body aches. Somewhere in the third week of my 21DSD, I got really sick, and it set off a series of chain reactions. I got stressed out. My Lyme disease flared up in a major way. I’ve basically been spending my days trying to heal. This isn’t glamorous or particularly exciting. It looks a lot like day-sleeping on the couch and watching all the Netflix. Sounds nice, right? Just not four weeks in a row.

Maple Roasted Red Kuri Squash With Lemon & Garlicky Greens {Gluten-Free, Paleo, Vegan}

Today is Halloween.

Unfortunately, I will not be serving up any kind of witch fingers with almond fingernails, or a jack’o’lantern that is vomiting  guacamole. Today there will be no graham cracker cookies that have been turned into bloody band-aids (yes, this is a real thing I saw on Pinterest), and nothing that feels like an eyeball in your mouth. Call me the Grinch of Halloween, or simply call me someone who doesn’t like to eat things that resemble blood, vomit or eyeballs. It’s a personal preference. I think my childhood self is disappointed in this whole paragraph. I used to be really big on the whole “peeled grapes feel like eyeballs in the dark” thing. I guess I’ve gone soft.

My husband just informed me that the above paragraph makes me sound really grumpy. Apparently he’s on team guacamole vomit. Oh, well. At least we both agree that leftover peanut-butter cups need to be eaten swiftly, blamelessly, competition style– straight from the trick or treat bowl. Marriage is all about compromise. Honest Whole 30 Recap, Week Two + Raw Zucchini Ribbon Salad With Tomatoes, Basil & Olives

Alright, folks! It’s already been a week since the Honest Whole 30 Recap, Week One!

If you didn’t catch that post, you can read it here. I get into what the Whole 30 is, explore the creepy term “sex with your pants on” in relationship to cauliflower pizza, explain why I am not crazy-militant with myself,  and how I accidentally ended up drinking all the bourbon. Oh, and no… just in case you’re wondering bourbon is not on the approved Whole 30 list of foods. Whoops. But hey, we’re keeping it real.

So, today I get to share with you the nitty-gritty of the second week along with a super simple recipe for this zucchini ribbon salad. See that picture? I put all of that in my face. All of it. I photographed it with two plates to make it look like I was a dainty lady– and that I wasn’t the only person hoovering a salad built for four into my singular gaping pie-hole.

Sometimes you just need to eat all the veggies, because you can’t eat all the chocolate. Also, when in doubt… spiralize all the veggies. It just makes things fun. I don’t have the scientific proof, but I’m pretty sure there is some sort of study somewhere by some guy who likes to do studies which states that eating zucchini in its spiralized form is 110 % more fun then eating “regular” zucchini.
