Bourbon Tea Lemonade Popsicles With Peaches

So, it’s been a crazy week. Albeit, most of it good–I am just losing track of time and space.

It’s been the kind of week where I thought it was definitely (had to be) Friday when in fact it was only Tuesday. This can make one feel as if they have dementia, so that’s cool. I feel as if I’m a confusing fortnight short of forgetting my first name and wearing a pizza on my head. Okay, maybe that’s a little overboard — but whatever the next step is after putting your car keys in the freezer or trying to open up your car door with your house keys is. That. […]

Zero To Sick In Sixty Seconds: The Time I Found Out I Have Lyme Disease

There are some things I’ve been meaning to tell you…

Maybe you’ve noticed I haven’t been around as much lately. I want to let you in and tell you why.

I’ve been writing this post in my head for months. There are several drafts that have never left the confines of my brain. Do I really want to put this into the world — or rather, my world? Will these words sully my happy little blogging space where we talk about dancing bears and high five each other over the melted chocolate in our bra? This silly space where I tell you about trying to cook bacon pantsless? Everything is breezy, sunny, honest and goofy over here. I like it. It feels happy. That’s my intention. I have a feeling you come here to laugh. I love that you do. Honestly, truly.

But sometimes I’m not laughing. Sometimes I’m scared. Sometimes my gut is swirly and dizzy with anxiety. Sometimes life hands you a bucket of lemons and you get exhausted in the process of trying to make lemonade — it’s too many lemons for one person to juice. You want some of these lemons? I could use someone to share them with. I guess this post is me giving you a handful of lemons — sharing some sour honesty and being vulnerable enough with you (my wonderful readers) to let you in on what’s been going on lately. Whew. This feels vulnerable. I feel naked without my usual puns and sarcasm. Naked, with a whole bunch of lemons. I’m only kinda sorry for the visual. […]

Be My Valentine | The Let’s Get Romantic Recipe Round-Up!

Holy Cupid! It’s totally almost Valentines Day. I know this because my calendar is telling me it’s February. I’m totally on top of things. Don’t worry (okay, maybe worry a little).  I feel like I am losing track of time and space, but that’s nothing new.

Have you ever noticed how polarizing this time of year is? There’s that awkward divide between the people clamoring to get into a schmancy restaurant with an expensive prefixed menu and the slightly bitter people who feel like going out and throwing old crusty sandwiches at anyone who dares play a little tonsil hockey in front of them. Boom. Did you just grab that girls butt? You get this old pastrami right in the face. I totally get it. I’ve been on both sides of this holiday. Not that I ever chucked sandwiches… but, I’m not going to say it’s never crossed my mind. Now, as a boring-but-kind-of-in-a-charming-way-married-person, I kind of fall somewhere in the middle. It gives me an excuse to write my husband a love letter (not that I should need one) while also capitalizing on the sale of both steak and lobster. We literally call it Steak and Lobster Day. I find this to be way more exciting than a bunch of roses or even one of those singing teddy bears. Feed me some turf with a side of surf and that speaks to my heart. Is that a fillet? Let’s makeout. […]

Totally Easy Slow-Cooker Kalua Pork

Happy New Year, Friends! I hope you enjoyed a bit of holiday R&R! What did you do? Did you travel? Did you stay home? Was there any Christmas caroling? How about scandalous NYE romance? Did your crazy aunt get drunk and take off her wig? I want stories. Spill it. You should write me. I enjoy a good tale.
I had a quiet holiday this year. The husband and I enjoyed cozy fires and copious amounts of carbs mixed with cheese. There was bourbon-sipping and movie marathons. There was friendship, wine, merriment and board games. There were cookies, a bag of butterscotch caramels, and a complicated relationship with a bag of chocolate-drizzled kettle corn. I’m just now slowly and reluctantly coming out of my Netflix coma and assimilating back into the real world. I suppose I should start drinking more water and wearing less yoga pants (oh, and possibly doing MORE yoga) — but, let’s just ease into things. I’m needing a little more time to regroup and reboot before I come in here guns blazing a fired up trail of resolutions and green juice. We’ll get there. There will be a notebook scrawled with 2014 intention setting and polar bears doodled haphazardly in its margins. But, for now… let’s just enjoy that sleepy moment right after waking up from a long nap. The late morning sun is shining in through my window and I just want to lay here a little longer with my eyes closed and take it all in. It’s comfortable here. […]

My Love Letter To YOU + Ginger Fizz Birthday Cheers!

Okay, Okay. I know you’re probably super tired of Birthday Week by now. It’s been an entire week of celebration. That’s a lot. Are you nursing a donut hangover? Yeah, me too. Or maybe it was that plate of ice cream sandwiches? Biscuits? Er…pudding? Who knows… it’s cool… let’s just throw a champagne cocktail on top of that. CELEBRATE GOOD TIMES, C-MON!! No regrets. Alright, so it’s almost over. Just bear with me. I have one more post for you. I feel like it’s only fitting I send off our first birthday with a full on love letter to YOU. It might get a little mushy… but, we’ll get through it. Afterwards we can get drunk. We’re going to mix champagne and bourbon together. What could go wrong? Don’t answer that question.  Okay, here we go… […]

Oh Em Gee… Pumpkin.

It’s happening. Pumpkin season is in full swing. I can’t be the only one who is trying to add this stuff to everything. I pretty much want everything to taste like pie. Is that so wrong? I say no. I say everything is better when it tastes like pie. I’m sure this isn’t true, but fall is ruining my brain with such thoughts.

As it turns out, I’m not the only one that is going absolutely pumpkin bonkers. Oh, no. I’m in some really great company. A lot of my blogger friends have gone off the rails and joined me in this celebratory pumpkin on pumpkin on pumpkin par-tayyyy! You wanna come? You’re totally invited. That’s why I’ve put together this recipe round-up of FIFTY pumpkin recipes that are all GLUTEN-FREE!!!

Well… what are you waiting for? Let’s dig in, shall we?  xox […]

Roasted Eggplant & Basil Spread

Every now and then I find myself in a stalemate with a veggie (this week it was an eggplant). We pause, we lock eyes… we just kind of stare at each other. I grumble and look quizzically at it as if it’s going to speak to me. It’s as if I am Michelangelo and this vegetable is my marble. Maybe it will tell me what it wants to be. Nope. It’s not talking. We’ve got ourselves a strong and silent type.  At this point I get all ponderous and morose over why I decided to purchase an eggplant in the first place. I consider letting it live out its final days on the counter top right next to my sad little banana graveyard, but just don’t feel right about it. Plus, let’s be honest…. I’m hungry. Life is hard. […]

Plantain Skillet Brownies With Salted Caramel Sauce { Gluten-Free & Paleo }

You know how I can’t seem to NOT let a banana turn all brown and mushy and gross? It’s like one of my hobbies. Should we count the times I’ve actually reached into my purse and accidentally squished an over-ripe banana all over my wallet? It’s a lot of times. I never learn that lesson. Curse the banana for being so portable and so quick to ripen! It’s a trick of nature. This is my way of shifting the blame onto an entire species of fruit that I can’t seem to get it together and clean out my purse like a grown up. I think it’s working.
Lucky for you, my reckless regard for the shelf life of a banana is working in your benefit. Remember this Tipsy Blueberry Banana Bread? That recipe rose from the ashes of a bunch of black bananas like a gosh darn Phoenix. After that post, my lovely friend Lauren commented that I really should be freezing all of these bananas and that they don’t need to hang out on my counters dying and attracting fruit flies. Okay, she didn’t put it like that… but, I got the hint and I totally started loading up the freezer. There are a comical amount of frozen bananas in there. I am seriously waiting for my husband to open up the freezer and have an avalanche of frozen bananas rain down on him. Not only would that be comically genius, but the look on his face would be priceless and probably pretty angry. Is it wrong that I find it super endearing when he gets angry? Oh, marriage.  […]

Donut Peach Green Juice

Don’t get too excited. I didn’t juice a donut (not that I’ve never considered it).
Instead, we’re juicing the glorious donut peach. That’s right. No, it’s not filled with jelly or fried to perfection. It is simply a sweet little variety of white peach that looks like it has been smushed into the shape of a donut. They are also called Saturn peaches. Perhaps it’s because they are simply outta this world… amirite? See what I did there? Of course you did. Oh, what’s that? We’re ignoring that joke and just moving on because you’re doing me the solid courtesy of letting it slide? Gosh, I appreciate you. For reals.
Perhaps it’s one of those days where we should get right to the recipe. The next joke I have in my brain involves a rocket ship. Don’t ask. Really. It’s Thursday. Officially the day in the week where my brain turns to cheese and puns fall out of my mouth with no regard for their quality. I’ve officially pulled the third rotting banana this week out of my handbag, and I’m eating cold meatballs for breakfast. Jealous? Don’t even get me started on my outfit. It’s like MC Hammer meets laundry day meets covered in dog hair. Can’t touch this. *Insert uncomfortable pelvic thrust dance moves here* […]

Chocolate & Honey Avocado Shake

I am going to be up front with you…
Every time I see someone post a picture of a green smoothie that contains avocado, I squirm. Avocados are for guacamole. You put them on top of your toast and sprinkle it with sea salt. You can totally sub them in for mayonnaise and make a Green Egg Salad. But, smoothies? Really? Is it a guacamole smoothie? I’m not sold. Why is this happening? I just can’t hang. I’ve been mistrusting of any and all humans that have muttered the words “avocado pudding” or claimed to make a great “vegan avocado brownie”. Shudder.
Like most of my food aversions, I decided to just dive right in. Challenge accepted. Guacamole smoothie, I’m coming for you.
My first avocado smoothie was horrifying. No joke. It was pretty much all veggies with half of a frozen banana. It tasted bitter. I spat it out. I felt sad. This smoothie was supposed to prove me wrong. It was supposed to be life-changing and wonderful and simply everything. Perhaps I put too much pressure there? Probably. No matter. As I spat out the evil green goo I had foolishly concocted in my Vitamix and watched it slink down the drain, it started a fire inside of me. A metaphorical fire. A smoothie-revenge-fire. An I-will-totally-win-you-fire. Avocado smoothie, you will be mine. MUAHAHAHAHA! (Dastardly avocado whispering evil laugh) […]
