Hey! Today we’re celebrating our dear friend, the writer of the strikingly beautiful blog Pure Ella! Since Ella is expecting a brand new little one, we’ve decided to throw her a virtual baby shower! Maybe we can’t all get together in person and stuff our face with pretty food while rubbing her cute prego-belly, but that’s not going to keep us from celebrating. We’re rocking this baby shower virtual-style. We’re raising our glasses in front of the computer, wearing pajamas while totally thinking about the cute party dress we’d wear in real life. Oh, and I’m totally bringing the mocktails.
Yes, you heard me right. Mocktails. That’s the G-rated version of a cocktail. We’re keeping things baby shower appropriate. If you feel the need to amp things up, I can’t stop you from toting a flask of rum in your push-up bra. Your bra, your choice. But, I promise you won’t even really miss the booze. You will be too busy oooh-ing and ahhh-ing over this sweet, tangy and cooling refreshment. It tastes a bit like a mojito… except you can drink four of these without making any post-mojito poor life decisions. Life is good.
So, I raise this here mocktail to you, dear Ella! Cheers. Wishing you a beautiful, safe and speedy delivery! I know your sweet spirit is going to be bringing another very special tiny little human into this world. You’re amazing. You’ve got this. All the things. And, just to be clear if this was an in person baby shower I would totally be the weird lady that kept grabbing your belly without asking and exclaiming things like “WONDER OF WONDERS, MIRACLE OF MIRACLES!” So… there you go. Online it is. Xoxox.

Cucumber + Mint Limeade
Ingredients
- 1 large English cucumber, peeled, seeded and chopped
- 4 sprigs of mint, de-stemmed
- Juice of 2 limes
- 1/4 cup sugar
- 1/4 tsp course sea salt
- 3 1/2 cups filtered water
- 1 cup ice
- cucumber spears, mint leaves and lime wedges to garnish (optional)
Instructions
- Prep all of your ingredients. Make sure your cucumber is peeled and seeded. To seed a cucumber simply cut in in half and use a spoon to scoop out the seeds. Coarsely chop up your cucumber and put it into your blender. Pull the mint leaves away from their stems and add them to the blender as well.
- Add the remainder of the ingredients to the blender (excluding garnishes) and blend on high until the limeade is completely liquefied and mixed. I used a high powered blender and it only took about a minute for everything to come together nicely.
- Serve immediately over ice and garnish with mint, a slice of cucumber and a lime wedge.
- If you don't finish your limeade immediately you can keep it in an airtight container in your fridge and finish it within the next two days.
