Butternut Squash and Roasted Grape Salad

I let myself loose in the farmers market this past weekend.  It’s a dangerous thing to do.  I always want everything.  There is just so much bounty there.  You want squash?  They have every kind.  Fruit? Don’t even get me started.  Three bunches of hearty greens for four dollars?  YUP.  SOLD.  I strategically avoid the areas where they sell the meat and fancy cheeses, because that could be a problem for me. They are deliciously pricey.  I want them.  All of them. There is also an area where I only let myself go occasionally that sells goat milk ice cream and a booth that sells gluten free cinnamon coffee cake.  Obviously, I want those things too.  I am not shy.  I love food.

This time, I gave myself a budget of twenty bucks and it was off to the races.  We were done shopping when the money ran out.  We got a bunch of grapes, pomegranates, persimmons,beets, delicata squash,kale, chard, collards, some pickling cucumbers and some dill.  Oh, and I also treated myself to a gluten free crepe with bacon and tomatoes. ( I obviously did not strategically avoid that aisle hard enough.) Light As Air Pumpkin Cake | Gluten-Free

I went to the mall this weekend.  They were playing Christmas carols.  I spent my ride home singing “I’ll Be Home for Christmas” without realizing what was going on.  They inadvertently hijacked my holiday spirit. Crafty.

Why do we have to rush through this holiday season?  I still have my jack o’lantern on the porch.  Chill.  We’ve got time.  Let’s not rush things.  I’ve still got pumpkin recipes for you!  I am not ready to switch to egg nog (least of all because it’s awful).  Fall has barely arrived.  I just want to relish in cinnamon and cloves and all that this season has to offer before I am bombarded by peppermint, blow-up snowmen and Mall Santas.  We will get there.  All in due time. Zucchini Lasagne | Gluten Free

I love lasagne.  It’s bubbly cheesy goodness, it’s wonderfully savory sauce and all of its hearty comfort. Italian food feels very comforting to me.  When I was sick, my Dad would always make me pastina with butter and cheese or lentil soup with pasta shells.  My Italian grandmother is also a mean cook!  Her lasagne actually has meatballs inside of it.  Does that sound amazing?  Yup.  Yup, it is.

Ever since becoming gluten free, I have not had this wonderful dish.  I couldn’t find the motivation to create it with rice or corn or quinoa noodles.  I felt like it would be a disappointment, and might turn out to be the mushy counterpart to my Grandmother’s lasagne.  Don’t get me wrong, I do indulge in gluten free pasta now and then, and it can be quite tasty, but it can also be finicky and unfriendly. Cheesy Cauliflower Bake

 When the seasons start to change, and the weather starts to shift, I find myself going into hibernation mode. I nest. I start to do things like organize weird, neglected cabinets in the house and bake pumpkin scones. I want to be comfortable and warm and cozy.  I want to stuff my face with cheese and starch.  I want to break out my husbands over-sized, fleece sweatpants and make them acceptable to wear in public.  Let’s redefine sexy.  Right? This probably won’t happen, but I am still hoping.  Hey, Pajama Jeans happened, and no one saw that coming.  There’s  a chance.
