You guys! Today we’re having a guest in the house (should we do some raise the roof moves? I think that sounds right)! Our guest today is Alyssa and she blogs over at Queen of Quinoa. I’ve been crushing on her blog since I started this little space of my own. As her name suggests, she is a royal wizard when it comes to putting quinoa in everything and anything. For example, today she’s dishing us up DOUBLE chocolate pancakes with some sneaky quinoa inside. Love it. Just look at that stack of hotcakes and tell me you don’t want to face plant all up in there. This may sound weird/creepy, but Gina and I first met (just a couple of months ago) on Facebook. We have a few mutual food blogging friends, and I definitely creeped on her FB page and all over her blog, but we had never formally “met”. And while we live on opposite sides of the country, as soon as we started chatting, it clicked. It’s amazing how easy the conversation is when you talk to like-minded people.

When she asked if I was interested in guest posting here on So… Let’s Hang Out, I jumped at the chance. It’s not often that you get to share one of your own creations on another blog that you simply adore!

At first I was going to go the breakfast cookie route. I knew I wanted it to be chocolatey, and all the recipes I tried just didn’t turn out how I wanted them to. So…still stuck on the breakfast track, I settled on pancakes. You can’t go wrong with pancakes, right?

But not just any pancakes. Double chocolate pancakes with a creamy coconut sauce. Yes, it exists. Yes, it’s utterly decadent. And yes, we’re having it for breakfast.

These pancakes may seem over the top, but they’re totally worth it. While they’re packed with chocolate, they are also full of nutritious ingredients. For starters, we’ve got quinoa. We also have raw, vegan protein powder. And high-fiber coconut flour. All coming together in a stack of elegant (and indulgent) pancakes.

Gluten-Free Double Chocolate Pancakes

Serves makes 8-12 pancakes     adjust servings

Ingredients

    For the batter

    • 1/4 cup coconut flour
    • 1/4 cup cooked quinoa
    • 1/4 cup unsweetened cocoa powder
    • 1 scoop protein powder
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 1/4 cup non-dairy milk of choice
    • 2 eggs
    • 1 tablespoon coconut oil, melted (plus more for cooking)
    • 1/4 cup chocolate chips (plus more for topping)

    For the glaze

    • 1/4 cup coconut butter, melted

    Instructions

    1. Whisk together dry ingredients in a large mixing bowl. Set aside.
    2. In a small mixing bowl, beat together milk, eggs and coconut oil. Add to dry and mix until smooth. Fold in chocolate chips and let sit for 2 - 3 minutes.
    3. Heat a nonstick skillet over medium-low heat. Add a touch of coconut oil and swirl it around the pan.
    4. Scoop ¼ cup batter onto skillet. Cook until small bubbles begin to form on the top of the pancakes, 2 - 3 minutes. Flip and continue cooking for 1 - 2 minutes. Transfer to a serving dish (or 200 degree oven) to keep warm. Repeat until no batter remains.
    5. To serve, drizzle pancakes with coconut butter syrup and top with chocolate chips.
    6. Dig in and enjoy!
