Thai Style Roasted Cauliflower Steaks {Guest Post From The Pig & Quill}

Today we’re lucky ducks! My friend Em from The Pig & Quill is in the house, bringing her usual humor and cooking us up some fancy looking veggie steaks! I mean…look at those things. Did you know that cauliflower could do that? Amazing. Thanks for hanging out, Em! xox
Heyyyyo, Em here from The Pig & Quill. *wave* I know Gina usually addresses you fine folk with charmingly arctic pet names, but I don’t want to bite her style too hard, so we’ll just go with the always-classic Helllooooo Friends! Bonus points to anyone who read that in the voice of Wakko. Like, the Animaniac who packs away the snacks. Like, Helllooooo Nurse! Am I dating myself with that reference? Why, no, actually, I’m married, but I do believe one truly has to know oneself before settling down with someone else. […]

Roasted Broccoli + Carrots with Crispy Quinoa + Goat Cheese

We’ve got a guest in the house today! It’s my lovely friend Sherrie from With Food + Love –blogger and health coach extraordinaire.  She’s always doing things with veggies that make my heart go pitter-pat, so I invited her over here to hang out with us and share some of her delectable veggie love! Yay!

Hey guys – I’m Sherrie from With Food + Love and when Gina was all – “Heyyy you wanna come hang out and write a guest post for me?” I was all – “Yeah, totes def, that sounds amazing” and so there you have it. Here I am, honored and super pumped to be sharing my Roasted Carrots + Broccoli with Crispy Quinoa, Goat Cheese + Lemony Oregano Dressing, whoa that’s a mouthful, ha literally. I do have to say, this is one of the yummiest things I’ve made in a long time. It’s bursting with flavor on every level, so let’s get into it. […]

Slow-Cooker Beef Brisket With Bourbon BBQ Sauce {Gluten-Free & Paleo}

So, remember last week when we did our virtual rain dance while chowing down on these scones? Well, IT WORKED! As I’m writing this, the skies are stormy and the raindrops are pounding rhythmically off of my roof. There are puddles. I should know. Emma jumped in one earlier. This is one of the hazards of Golden Retriever ownership. That whole “I’m a water dog” thing? Yeah, that runs deeps. Instincts are real. Where Emma’s instincts are to throw herself into puddles and try to hurl her body into my bubble bath (yes, while I’m inside of it–it’s alarming to see a vivacious sixty-five pound creature running at you full tilt while you are naked in a confined body of water–trust me), my human instincts are telling me to cook something warm. Take a hunk of beef. Put it in a slow cooker. Take a nap. Watch a movie. Wear a chunky sweater. Meditate on the sound of the rain. Be cozy. Put on some jazz music. Pour yourself some tea. Did some bourbon slip itself into that cup of tea? Whoa. Sneaky. […]

Greek Salad-Stuffed Sweet Potatoes {Primal, Vegetarian, Vegan & Paleo Option}

We are young. Lunchbox to lunchbox we stand. Sick of my sandwich with ham. Lunch is a battlefield. We are strong. This sad cup of soup just feels wrong. Been in my lunch-rut too long. Both of us knowing… Lunch is a battlefield.

So. That happened. Somewhere Pat Benatar is rolling her eyes. Either that, or she’s applauding my rendition of her song and thanking me for saying the words that she’s always wanted to say. “You know, Gina… it’s easy to write a song about love, but no one tackles the hard hitting emotional issue that is LUNCH. Thank you.” These are the words I imagine Pat saying to me. She’s rolling her eyes, isn’t she? Yeah. Probably that. […]
