Simple Heirloom Tomato & Burrata Salad | An Ode To Summer

How much have I talked about summer lately? A lot. Are you all hoping I shut my face soon? We get it, Gina. It’s hot. You aren’t wearing pants. It’s time for cocktails. The produce is amaze. We get it. Just stop. #WishICould

So, yeah. All of those things. But… TOMATOES, amiright? I mean, look at them. Just add them into the summer celebration! Is there a tomato dance? I’m sure we can figure one out. Maybe a jazz square on bottom with a raise the roof on top? My dance library is limited. Let me know if you come up with something more exciting. The more shoulder action the better. If you want to add in a shimmy, I won’t get upset.

Tomatoes are totally the apples of summer (they aren’t, but it’s Monday and my analogies are lazy at best). They are sweet, juicy and plentiful. They come in every color and variety, and markets are exploding with them. Just ask my husband how crazy and muppet-like my face looks at a summer farmers market. You would think I’m a six-year-old at Christmas. I had a very similar expression on my face in 1989 when I ripped the Santa Clause paper off a Barbie Dream House. Excitement + Bliss + OMG-DAD-PUT-THIS-TOGETHER-BEFORE-I-LOSE-MY-MIND-AHHHHHHH-OMG! Greek Tacos With Lamb & Tzatziki Sauce

Things that I have learned this week:
1) Blow drying your hair while it’s 90 degrees outside is not ideal. You will sweat. A lot. Put on your mascara AFTER you are done if you do not want to look like one of those sad ceramic clown masks from the 80’s. Or heck, let your locks air-dry. You can call your semi-curly mullet “beachy”. It’s totally the season for that. Ugh. It’s a hot mess. Literally.
2) Going to the gym at two in the afternoon is the best. No one is there. Except that one guy, with his button down shirt tucked into his jean shorts. He is looking at your butt. You can see him doing it. There are mirrors everywhere. Okay. Maybe it’s time to change machines. Definitely.
3) I would like to hang out with a Capybara. I imagine us dressing up in matching outfits, walking the streets and dancing to this song. My brain lives in these places. It can get kinda weird in there. […]

Apple Coffee Cake | Gluten Free

I can’t really take credit for this one. This would be the brain child of one Betty Crocker. No joke.  I googled what I could do with the remains of my Gluten Free Bisquick and I found a recipe that has the words “Impossibly Easy” in the title.  It was a done deal.  Not only were they claiming that it would be easy, but impossibly so.

This could make a lovely Thanksgiving breakfast.

I figured all of you lovely people could use something IMPOSSIBLY easy right about now. Heck, I could use something easy, and I am only making cranberry sauce. Between getting your turkey in a brine, or lacing up your turkducken and the stuffing prep and the three different types of pie you got going on you deserve something that pretty much makes itself.  Do you have flour on your face right now? That is how I imagine everyone today. Perhaps because that is pretty much what I look like in the kitchen…Nay, in life. I am the girl that takes a shower and then manages to get salsa in her hair two minutes later. What am I doing eating salsa two minutes after showering? One Pot Spanish Rice

Is anyone  experiencing an Election Day hangover? Not the booze induced kind (unless you are…no judgement, I get it.) but rather the kind that comes from nail-biting anxiety and an over-indulgence in things like chocolate, or perhaps a particularly hefty Chipotle burrito bowl.  Yeah.  Me too.  I woke up this morning wanting to crawl back into bed.  Isn’t it Friday yet?  It seems like Friday.  Nope.  Still Wednesday. Hump day. That joke never gets old.  Truth.
