Spicy Ahi Tuna Poke {Gluten-Free & Paleo}

My oven is broken.

Like, sincerely broken. Not in that “the dog ate my homework”, excuse-y kind of way. I’m not blaming the oven for almost setting my cookies on fire yesterday, even though it was programmed to bake at 350 degrees. Except, that’s exactly what I’m doing — because, instead of heating up to a sensible cookie-baking temp, it heated up to approximately five billion degrees. Parchment paper turned to ash. Macadamia nuts and dark chocolate morphed together into hardened lumps of expensive coal. This all happened within three minutes.

I went to turn the oven off, and it said “This function is not in use”… Uh… Okay. So, I’ll just live like this now. I’ll get used to existing in a home with burnt cookies and a blazing oven inferno — spouting hell fire and destroying dreams. For a moment I imagined us dragging blankets into the kitchen and camping out in front of our new perma-hot stove heater for the rest of the winter. It’s the more expensive version of one of those garbage can fires you see in hobo movies. I tried to turn it off again. It shut down this time. Just for kicks I tried to turn it back on and it gave me an error message. To anyone who’s experienced this you will understand when I say  my oven was giving me a glaring, steaming, cookie-charring middle finger.

I hope you had a great holiday season. I spent my time road-tripping up to Washington state in order to spend Christmas with the in-laws. This is the first major trip we’ve embarked on since I started my Lyme treatment. Big deal stuff.  We packed up our little car and made room for our golden retriever in the back seat. We listened to a lot of  this podcast. We took Emma to the beach on Christmas day. We drank some of my Apple & Cinnamon Bourbon at night. We watched an entire slide show of really adorable fat naked baby photos featuring my husband as said really adorable fat naked baby. We stopped in Portland for a night on our way home  and stayed in a totally quirky dog friendly hotel. I woke up to gluten-free apple fritters and then spent too much money at Powell Books. Curried Shepherd’s Pie With Sweet Potato Mash {Gluten-Free, Grain-Free, Paleo}

When my husband goes away on business trips, I have my routines. The first night I will cook myself something nice and then dive into either a TV series that he’d never go for (i.e. Hello, Gossip Girl on Netflix!), or make a misguided decision and watch a documentary that either freaks me out or makes me weep. Like, full on ugly cry weep with snot and chest heaves. This time it was this Showtime series called Time of Death. I think I dehydrated myself with the amount of tears shed. It hit me in all the feels. Lucky for me, before I started watching this series I had pre-planned with some comfort food. The weather was seriously stormy, so turning on my oven felt like the right thing to do. What happened next was this curried shepherd’s pie. Oh, and then like three hours of death-themed docu-series viewing and blubbering. I can’t be trusted to be alone with myself. On the plus side, I managed to have this comfort food ready in the wings. The last thing you need is to cry all the tears, get dehydrated and headache-y and then NOT have any food to put in your face. Grain-Free Dark Chocolate & Pumpkin Butter Cinnamon Rolls With Fleur De Sel

I’m going to ignore the fact that both Halloween and Thanksgiving have passed and try to shove more PUMPKIN down your throat. Sure, we’ve already mixed pumpkin and chocolate together — but not into a CINNAMON ROLL. Believe me, this is going to be good.

I know that typically after Thanksgiving has ended we launch straight into everything peppermint and holiday — so, I’m going to rebel a little (shocking, I know). I’m shoving pumpkin butter into some cinnamon rolls. I’m slathering them with chocolate glaze. I’m sprinkling the tops with sea salt. These feel like the holidays to me. I could totally eat one of these while snuggling by the fire with a cup of tea. Actually, that’s exactly what I did. Oh, and then I ate one straight out of the refrigerator later that night. Turns out they are good cold too. Just had to check. Sometimes I use my blog as an excuse to professionally late-night-snack. It’s slightly shameless.   […]
