After a week of intense recipe failures one needs to bake cookies.
I think this is a rule. It feels like it should be a rule. Let’s call it a rule.
In between my lemon bar attempt and operation “OMG, is that supposed to be gnocchi!? “, I managed to get something right. I put some sunflower seeds into a food processor and made some nut butter. I combined it with almond butter. The two did a happy dance. I added in large chunks of dark chocolate, and decided that these cookies should be GIANTS. Instead of making a recipe that would yield a sensible dozen, I decided to instead make you six cookies. Big cookies. Forget about your kitchen failures cookies. Are you surprised that I didn’t just make one big cookie and take a fork to it? Yeah, me too.
Look at those chocolate chunks. Mmmmm. Did I mention that these cookies are totally paleo? Yup!
Although I completed my 30 days of paleo, and have since dipped my hungry little hands into the world of certain carbs, I can say I felt really good for most of those 30 days. I will most likely still incorporate a lot of paleo recipes on this site and continue to eat that way most of the time. It really wasn’t as difficult as I thought it was going to be. There was a day where I wanted to eat a wheel of cheese and had to resist the urge, but that is normal. Cheese is a naughty temptress. That is a weird sentence. I will not erase it. It’s going to live here.

Giant Sunbutter & Chocolate Chunk Cookies
Adapted from PaleOMG
Ingredients
- 1/2 cup sunflower seed butter (you can either buy this pre-made, or you can make your own by processing 2 cups of sunflower seeds in a food processor until it is smooth and creamy like almond butter)
- 1/2 cup almond butter
- 1 egg, beaten
- 2 tsp vanilla extract
- 1/3 cup maple syrup
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 tsp salt
- 1 cup dark chocolate, coarsely chopped into chunks.
- Coarse sea salt, to sprinkle on top (optional)
Instructions
- Preheat your oven to 350 degrees.
- In a large mixing bowl, mix together all of your ingredients except the chocolate chunks until they come together and mixed thoroughly.
- Once the batter comes together, fold in your chocolate chunks.
- Line a baking sheet with parchment paper, and scoop your batter onto the baking sheet to form six cookies.
- If you like a little sea salt on the top of your cookies, sprinkle a little onto each cookie before putting it in the oven.
- Bake for 18-20 minutes, or until they are golden brown.
- Allow to cool, then enjoy cookie-monster style!

Do you have nutritional value for this? Am mostly interested in carbs , fat & calories. Sounds awesome regardless and plan to try this for sure.
Hey Jandee! I do not have a nutritional value for this recipe, as I am not much a calorie counter. There might be a site online that would calculate it for you? The recipe made 6 giant cookies, or you could make them smaller and make 12 cookies. (I am guessing that would reduce the calorie count a bit. 😉 ) Hope that helps.
I jumped from Instagram just to view these cookies. Yum and there is some healthy stuff in there too, gotta love that. These will be a perfect batch of cookies for just me, as my kids won’t eat a cookie that has nuts in it. They like the classic sugary sweets. I hear you on recipe failure weeks. Don’t you just hate them? It’s so frustrating when you get so excited to make a recipe and then have it be an utter failure. I’ve tried these two veggie burger recipes recently and they both were just lacking, lacking what I don’t know, but something. I do love it when you have those recipe successes though. Your kids sounds like my husband. He is a firm believer that nuts ruin baked goods… little does he know, I secretly feed him nuts all the time. Muahahah! And yeah, recipe failure weeks are silly. It just got to a point where I started laughing. What are you going to do, right? 🙂
LOVE this recipe! Can’t wait to make it! I felt really good on my 30 days of paleo… I’ve fallen off the wagon so badly (damn, free lunches at work) that I need to do another 30 days to jumpstart my healthy eating again. Michelle… on day 30, I decided to go buy myself a fancy piece of cheese. Oh, and then after that I totally ate an honest dog with a gluten free bun and tons of sauerkraut… It got real. Oh man, I don’t know how you can do the free food/lunch situation. SOOOO TEMPTING! How are you supposed to say no?! Rough.

I am so excited to see a cookie made with sunbutter instead of peanut butter. I am allergic t o peanuts (only mildly, but enough to keep me away from them, even though I love peanut butter). Every time I see a peanut butter cookie recipe I wonder if it would work or even taste good if I substituted sunbutter. Thanks to your recipe, I don’t have to wonder anymore! Thank you!

Fantastic recipe. I swapped out the eggs for applesauce and it worked out beautifully. Also dropped the baking powder. The baking soda and applesauce make for plenty of leavening.

I made these today…fan-damn-tastic. I also made my own sunbutter…more annoying than I thought it would be, but it worked out okay.
Anyway, the stats for the entire recipe are:
Calories: 2800
Total Carbs: 230.9g
Total Fat: 186.1g
Fiber: 11g
Protein: 70.1g
So, if you just divide by the number of cookies you made you can figure out the nutrition facts.

Absolutely fabulous!!!! Omg….tried many different paleo recipes and this is not only the best paleo but best cookie recipe I’ve tried in a long time. Substituted honey as I didn’t have maple syrup and even used a bit less. The bees were such a hit I have requests to make more. Was skeptical without using flour of any kind but these are amazing. Glad to have run across your site.
