Salmon & Avocado Poke {Gluten-Free + Paleo}

Raise your hand if you don’t want to actually cook dinner tonight? I can’t actually see you, but I’m pretty sure your hand is raised. Mine is. High. Way up there. Like, straight up. I must look like I have an urgent question. I’m going to put my arm down now. It’s much easier to type with two hands. You’re probably like “Um, Gina…why are you so mad at cooking? You write a dang food blog. Are you upset with your life choices? WHAT IS LIFE?!?!” Or, maybe this is just me having an uncomfortably public, not-so-internal existential crisis on the internet…and talking about myself in the third person, which is kind of gross and every bit regrettable. That’s cool, guys. I’m fine. Let’s just eat some raw fish. Spicy Ahi Tuna Poke {Gluten-Free & Paleo}

My oven is broken.

Like, sincerely broken. Not in that “the dog ate my homework”, excuse-y kind of way. I’m not blaming the oven for almost setting my cookies on fire yesterday, even though it was programmed to bake at 350 degrees. Except, that’s exactly what I’m doing — because, instead of heating up to a sensible cookie-baking temp, it heated up to approximately five billion degrees. Parchment paper turned to ash. Macadamia nuts and dark chocolate morphed together into hardened lumps of expensive coal. This all happened within three minutes.

I went to turn the oven off, and it said “This function is not in use”… Uh… Okay. So, I’ll just live like this now. I’ll get used to existing in a home with burnt cookies and a blazing oven inferno — spouting hell fire and destroying dreams. For a moment I imagined us dragging blankets into the kitchen and camping out in front of our new perma-hot stove heater for the rest of the winter. It’s the more expensive version of one of those garbage can fires you see in hobo movies. I tried to turn it off again. It shut down this time. Just for kicks I tried to turn it back on and it gave me an error message. To anyone who’s experienced this you will understand when I say  my oven was giving me a glaring, steaming, cookie-charring middle finger.

Totally Easy Slow-Cooker Kalua Pork

Happy New Year, Friends! I hope you enjoyed a bit of holiday R&R! What did you do? Did you travel? Did you stay home? Was there any Christmas caroling? How about scandalous NYE romance? Did your crazy aunt get drunk and take off her wig? I want stories. Spill it. You should write me. I enjoy a good tale.
I had a quiet holiday this year. The husband and I enjoyed cozy fires and copious amounts of carbs mixed with cheese. There was bourbon-sipping and movie marathons. There was friendship, wine, merriment and board games. There were cookies, a bag of butterscotch caramels, and a complicated relationship with a bag of chocolate-drizzled kettle corn. I’m just now slowly and reluctantly coming out of my Netflix coma and assimilating back into the real world. I suppose I should start drinking more water and wearing less yoga pants (oh, and possibly doing MORE yoga) — but, let’s just ease into things. I’m needing a little more time to regroup and reboot before I come in here guns blazing a fired up trail of resolutions and green juice. We’ll get there. There will be a notebook scrawled with 2014 intention setting and polar bears doodled haphazardly in its margins. But, for now… let’s just enjoy that sleepy moment right after waking up from a long nap. The late morning sun is shining in through my window and I just want to lay here a little longer with my eyes closed and take it all in. It’s comfortable here. […]
