Lemon Roasted Salmon With Pepita Pesto Quinoa & Tomatoes

Lately I’ve felt like I’ve been stewing in some sort of creative rut.

The words aren’t flowing freely from my fingers. Perhaps this is why I’ve signed up to write an entire novel in the month of November. Clearly, I’m a glutton for punishment. The graph of my current word count tells me that I will most likely be finishing this “novel” (I use quotations since my “novel” has turned out to be  a collection of non-fiction stories about my very real, very awkward life) sometime around mid December. Nothing inspires a person more than being approximately sixteen days behind on a writing project when you’re already suffering from an intense bout of writer’s block. Can you see my sarcastic-smirk face right now? Because, that. Is hibernation an option for humans? I kind of want to sign up. Maybe they have a month dedicated to napping. Count this girl in.  […]

Whole-Roasted Butter, Lemon & Rosemary Chicken With Garlic & Root Vegetables {Gluten-Free, Paleo}

Comfort food.

It doesn’t always have to be Mac & Cheese, Biscuits or Doughnuts (even though, #OMGYumGetInMyFace). To me, comfort food often means making Kalua Pork in my crock pot, or simmering Red Wine Braised Short Ribs on the stove. It’s therapeutic food that cooks slowly and fills up your house with the most delightful aromas, in this case BUTTER. It’s the kind of food your grandmother would make. The type of meal that you’d want to eat after coming home from work on a rainy day. You know, it’s comfortable. Comfy. Like sweats, but edible. (I should have quit while I was ahead with the descriptions…Oh, well.) […]

Banana Ice Cream Cake with Lemon Cheesecake Icing and Carrot Cake Crust {Raw, Paleo, Vegan, Gluten-Free}

You guys. I made a healthy ice cream cake!!

Okay, so this isn’t entirely true. I made a healthy ice cream + cheesecake + carrot cake. Yeah, I know, it got a little bonkers. But, I promise it got weird in the best way possible.

After finishing the Whole 30, my brain was swirling with desserts. Can you blame me? So when the folks from Paleo Parents sent me a very nice e-mail asking me to write a guest post for their blog, I decided to go big. My brain flipped the “LET THERE BE CAKE!!” switch. So here. Cake. All the cakes. Smashed together into one glorious no-bake cake. […]

Grain-Free Lemon & Blueberry Scones {Posting over at The Kitchn!}

How’s everyone’s week going? It’s totally almost Friday, which means there’s an impending weekend, which totally calls for things like scones and tea and naps. That sounds idyllic right about now. I’d love to curl up and listen to the raindrops hitting our deck while dunking one of these scones into a cup of chamomile. Maybe read a book. All the wild things one does during their Saturday afternoon. Hmmm… maybe I’ve lost my edge. Oh, well. 😉  […]
