Happy New Year, Friends!!

I hope you had a great holiday season. I spent my time road-tripping up to Washington state in order to spend Christmas with the in-laws. This is the first major trip we’ve embarked on since I started my Lyme treatment. Big deal stuff.  We packed up our little car and made room for our golden retriever in the back seat. We listened to a lot of  this podcast. We took Emma to the beach on Christmas day. We drank some of my Apple & Cinnamon Bourbon at night. We watched an entire slide show of really adorable fat naked baby photos featuring my husband as said really adorable fat naked baby. We stopped in Portland for a night on our way home  and stayed in a totally quirky dog friendly hotel. I woke up to gluten-free apple fritters and then spent too much money at Powell Books. Brussels Sprout Salad With Walnuts, Cherries & Bacon

Summertime means 9pm cocktails on the deck because the sun has yet to go down. It means grilling. It means buying 4lbs of peaches at the farmer’s market and existing on them for days at a time. It means questionable fashion decisions because, heck, it’s hot. It means letting the dog get wet while you water your plants because she must be ever hotter in that fur suit of hers. It means let’s not turn on our oven tonight. It means berry picking and cucumber pickling. It means walking to the park in the evening and feeling the warm breeze hit your skin. It means waking up with approximately six mosquito bites on your backside even though you were totally wearing pants last night on that walk. What? That’s uncomfortable. Oh, well. It means you’re now having an intense relationship with Calamine lotion. Excellent.

Summer totally means SALAD. You know what I’m talking about. It means the kind of salads that can pass as a whole meal. The kind of salad that your husband will ogle because it has bacon and fruit and is topped with a runny soft-boiled egg. This salad is serious and meaty and summery. It’s a total win. Raw Kale Salad With Creamy Almond Dressing

I like kale. I like it in a salad. I like it in a quiche. I like it in my dip. I find ways to put it into most everything. Remember that Shepherd’s Pie we made? I totally kale-d you. I just made a verb out of kale, and although that might be taking things too far, we’re going to run with it. Prepare to be kale-d.
So, this salad was my attempt at trying to recreate a salad that I splurged on at a restaurant over the weekend. The original recipe had a creamy tahini and peanut dressing. Can we just talk about tahini for a moment? I like the taste of it. I can never remember to purchase it. EVER. This is the reason that I never make my own hummus, or if I do, it ends up tasting like it’s missing something. This would be because it IS missing something.
